applesauce spice cake
cake ingredients:1 jar (24 oz) applesauce (preferably Musselman's)
1/2 cup butter, softened
2 eggs
2 cups sugar
3 cups all purpose flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1/2 tsp allspice
carmel frosting ingredients:
3/4 cup butter
1 1/2 cups packed brown sugar
8 tbs evaporated milk
1 1/2 cups powdered sugar (sifted)
cake:
1. in a medium bowl (or using your stand mixer) beat together the butter, sugar, and eggs until fluffy.
2. in another medium bowl sift together flour, baking soda, cinnamon, nutmeg, cloves, and allspice.
3. add applesauce and sifted flour mixture to the egg mixture. beat on medium speed for 2 minutes.
4. pour into greased 13" x 9" x 2" baking pan. bake at 350° for 50 minutes. cool in pan.
carmel icing:
1. once cake has completely cooled place the butter and brown sugar in a medium saucepan on the stove. Heat and stir until boiling. boil for 2 minutes, stirring constantly.
2. stir in evaporated milk and let cool until warm to the touch.
3. then stir in the sifted powdered sugar 1/2 cup at a time. spread over cake, let cool, and devour!
